Steak Fiesta Bowls

True story, I made the chicken version of these for years and my children always complained but ultimately ate it. One day I tried the same recipe with steak and suddenly, the world was different.

Steak Fiesta Bowls

  • 2 lbs top sirloin steak
  • 3 cups instant rice
  • 1.2 cups frozen sweet corn (or fresh if you have it!)
  • 1 can (15oz) black beans (drained and rinsed)
  • 1 lime
  • 1 tsp vegetable oil
  • 2 tsp sea salt (divided)
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 2 tsp garlic powder (divided)

Garnish Recommendations

  • shredded colby jack cheese
  • green onions (sliced)
  • sliced avocado
  • diced tomatoes
  • lime wedges
  • pickled (jarred) jalapenos
  • salsa

Marinate the meat: finely slice the steak into thin strips and place into a gallon size zip close bag. Add one teaspoon salt, one teaspoon garlic powder, and the juice from one lime to the bag. Make sure the bag is completely sealed then shake and smoosh it around to fully coat the meat in the spices and juice. Yes, that is a technical term: smoosh. Place in the refrigerator to marinate for a couple hours, or at least while you prepare the rest of the ingredients.

Prepare the rice according to the package. Drain and rinse the black beans. Once cooked, add the rice to a medium/hot skillet coated with a thin layer of vegetable oil or butter. Add black beans and corn to the skillet and stir until heated through. Reduce heat to medium-low. Sprinkle in remaining salt, cumin, and garlic powder. Squeeze one half of the other lime’s juice over the rice mixture. Continue stirring until well incorporated, making sure the rice does not stick to the bottom of the pan.

Slice veggies to desired size and prepare other desired toppings.

Remove the marinated steak from the refrigerator and preheat the grill or skillet. Depending on the size of the meat, it should only take a few minutes to brown. Be prepared for it to come together quickly and be sure not to over cook the steak. Once the meet is browned remove it from the heat.

You can serve this as one giant dish, or what I like to do is allow my kids to build their own bowls. Much like a taco, everyone has their own favorite toppings. Start by adding the rice, corn, bean mixture to the bottom, then add steak, cheese, and veggies. Finish with some sliced green onions and a lime wedge. It’s a party in a bowl! Get it?! 😉
